About the author

My name is Maria Holmes and I love to cook and eat fine tasting food that’s good for you. There are few things as satisfying as sitting down to a homemade meal with those you love. My interest in food is centered on my family. I am married to a wonderful husband and I am mother to a beautiful girl (Ellie – 8 years old) and a wonderful boy (Isaac – 6 years old).
I am by no means a professional chef, but I would like to think that I’m a good home cook. I especially love to create delicious meals that are easy to prepare and made with a minimum of fuss. I believe that if it takes too long to prepare, then it better be worth it!
My interest in cooking came to me while I was working as a waitress in a small local café. I loved everything about it … the amazing smells of simmering soup and freshly baked bread, the spicy aroma of a healthy bowl of gumbo, and the melt in your mouth goodness of an apple pie that just came out of the oven. The art of baking and cooking captivated my soul.
My Incurable “Disease”
But my newly found love for cooking came at a cost. I have developed a severe (but non-life-threatening) disease called “Low-Resistance-to-Yummy-Recipes-Syndrome” (a.k.a Cookbookitis). One of the symptoms of this disease is the complete inability to resist collecting cookbooks, magazines with recipes, even those little brand name mini-cookbooks positioned oh-so-temptingly next to grocery store checkout lanes. For years I tried to get around this by doing most of my major grocery shopping at Costco. But guess what? Costco started selling cookbooks and now my collection continues to grow.
I’m slightly embarrassed to say that I have at least 500, maybe more, cookbooks (now I did say it’s a disease!). I am going to try to inventory my collection of cookbooks soon. I’ll let you know how many I have when I finally catalogue and classify all of them.
With soooooo many cookbooks, I am always trying to find the best foods to feed my family. I am passionate about only serving my family meals that will strengthen, grow, and energize them. I have been reading my many cookbooks and started thinking about creating my own cookbooks and sharing my many creations with other avid home cooks. There is always so much to learn!
You will notice that I try to keep my cooking style clean and simple. I know that the more simple I keep it, the more likely I’m going to succeed in consistently preparing beautiful and tasty meals.
It’s been a journey of learning and experimenting in the kitchen, but one that I’ve greatly enjoyed. I hope that my cookbooks will help you in your journey as well!

First of all I have to confess that I am not a Vegetarian but I enjoy cooking Vegetarian meals as a healthy alternate to my husband steak and mashed potatoes. My husband and I work long hours and I rely a lot on my slow cooker for minimally 1-2 meals per week. On weekends we love to hit the golf course and I will again put something into the slow cooker and then enjoy 18 holes without the worry of what to make when we get home. I am a cookbook hound however I only use 1 or 2 recipes from each book. I have tried almost every recipe in your cookbook and we have enjoyed each one immensely. Your recipes are really easy to prepare and there is nothing better than walking into the house after a long day and being greeting by the aroma of a great meal. My husband really likes the Cream of Mushroom Soup, Roasted Tomato and Corn Chilli, and the Sweet Potatoes. I love the Vegetable Minestrone Soup, Very Veggie Chili and my ultimate favorite - the Chocolate Peanut Butter Cake. I have been recommending your book to all of our friends and have prepared a few of your recipes for them to try as well. I would definitely recommend it to anybody who asks and am looking forward to your next cookbook

These recipes are very easy to follow and can be combined with certain meat dishes. I haven't so far used the slow cooker, but I'm planning to buy and try it by using advices given by the author. Recommended!

There are several recipes that I enjoy but felt that there should be more recipes using different vegetables which I don't now use.

She starts the book giving you several tips to use when trying to cook your own favorites in the slow cooker, then goes into the 30 promised recipes. She had them divided into sections like soups, potatoes, and desserts, and then has several in each section.
Several of the dishes are really side dishes, like the scalloped potato recipe, but it is nice to have something like this ready when you get home. I like the three different versions of baked beans ad have tried two of them so far.
This is recommended for any one who is trying to add a little variety to their meals, and anyone who is trying to get more use out of their slow cooker.

Look , I'm not a lazy person but I appreciate having a good meal without the usual mess & the long hours of cooking. My slow cooker & this vegetarian cookbook are making my gradual conversion to a vegetarian diet so easy. I didn't have to sacrifice my chili as Maria Holmes have come up with a vegetarian version of chili. I have tried 4 recipes & I'm not disappointed even my daughter is enjoying it too!

I like curry, but the curry rice and lentils was too much. I am currently waiting for my split pea soup to be done . I don't like that the recipe says at least 4 hours. I would like to know as better to know a better time frame when cooking with certain as count of time and I have a feeling it will be too watery.

I like that this book gives some very specific details for meatless ingredients that do or do not hold up well during the slow-cooking process. I also like access to the author's recipe site through a link in the book.
For someone exploring vegetarian recipes for slow cooking, I think the content is well worth the small investment.
