NOT Suitable For Glass-top Stoves
If you have a glass-top stove and you are searching for pans with a flat bottom, your quest will NOT end with Circulon. Flat bottom pans, fully in contact with the glass stove top, will transfer heat quickly and evenly. The three Circulon pans I receive (8", 10" and 12") all have concave bottoms. The 3" diameter recessed logo in the center of the pans make the condition even worse. At this center logo, the metal is a full 1/8" above the heating element. Only the edges of the pan are in contact with the glass top so heat transfer is very slow and uneven. I sauteed some onions in the 12" pan (which does fit within the large heating element on my stove). I had to turn the element to the highest setting to get any action. I completed the entire cooking process on HI, taking about 10 minutes -- with a truly flat bottom pan, on HI heat, the onions would have been scorched black in half that time (and possibly ignited!) After the onions I tried making a sauce. The liquid came to a full boil only around the edges of the pan -- where the bottom of the pan was in full contact with the heating element. Attached are two photos showing the 12" Circulon pan with it's concave bottom. The third photo is a small Anolon pot for comparison. The bottom of the Anolon pot is quite flat -- nothing is perfect, of course. Water will come to a rolling boil in this pot in less than a minute. So, why didn't I buy Anolon pans? Because the reviews for the Circulon where so much more positive! In the Questions section several folks offer assurances that the Circulon pans DO have a flat bottom. I bought these pans because of those assurances. Perhaps these well-meaning folks just "eye balled" the bottoms of their pans and never laid a straight edge on them. It's also possible that Circulon made a flat-bottom pan in the past, but their quality control fell off when production was moved off-shore. It's also possible, though unlikely, that I just happened to get three defective pans. It's hard to fathom the very positive reviews written by some folks with glass-top stoves -- perhaps they have never used a pan with a truly flat bottom and so don't know the difference. Just to be clear, this review is not an endorsement of Anolon. Quite possibly, it's easier to mass produce a small pot or pan with a flat bottom. I'm returning the Circulon pans, of course, and next time I shop pans I will take my straight-edge to the brick and mortar store and check the pan bottoms before I buy. It's the only way to avoid repeat frustration. Except for the concave bottoms, these pans are wonderfully constructed. I really wanted to love them.     The first thing I noticed about these pans is that they are heavy! I was actually a little concerned that they would be a hassle because of the weight, but these are the least hassle pans I have owned! They're heavy because of the heavy bottom portion of the pan that makes for nice, even heating. Even on my smallest burner, the food in the 12 inch skillet browns and cooks evenly.

    I am a big fan of cooking without unnecessary oils, and these pans don't disappoint. I haven't needed any cooking oil or missed the non-stick spray that they remind you not to use. When I have used some oil or dressing to sauteé veggies, they have turned out wonderfully. Clean-up is a breeze, with or without using oil. These are marked as DISHWASHER SAFE (a real rarity among non-stick cookware), but I have never put them in the dishwasher because it is so easy to wash them quickly with a sponge, even if food is dried on. The fact that they are oven-safe is only an added bonus.

    The only potential drawback I can see is that they take a little longer to heat up than some other pans I have due to the heavy bottom. Once I got used to it taking an extra couple of minutes, I have barely noticed. I still think the even heating makes it well worth the extra bit of time.

    Replaced 3 pans i got from who knows where and any and everything sticks to the bottom. Looked around on amazon and decided to give these a try. The cost at the time was great and these looked to be a great quality.

    I got my set June 22, 2013 and i still use them and love cooking with them. I will say that the food doesn't slide off them like they used to (noticed this about 7 months down the road), but they still do a great job, and cleaning them up is super easy. i don't use cooking spray and i don't use high heat, as they are not intended to cook at super high. I also don't put them in the dishwasher, hand wash only. I'm not sure if you have to or not, but i believe they will last longer hand washing. The only issue i have with these pans, well my wife, is that they are heavy. It does not bother me to much, there have been a few times where I have noticed the weight but i would still buy these pans again.

    My 3 star is a bit of a 'ringer'. It is only to emphasize that heavy pans do have one serious limitation. They are slow to heat up, and slow to cool down. Of course that same slowness is connected with how evenly they heat. These pans deserve a 5 star for general cooking. If I had room for a 3rd set of 12,10, and 8 inch pans I would have a medium light no stick and a heavy no stick, as well as my heavy regular ones. My compromise is to stay with the heavy - the 8 inch no stick is medium light.

    I wanted to love these pans. I read all the reviews before buying them and thought they'd be really great pans. I've had them for two years now. I've been very careful with them, never washing them in the dishwasher, never cleaning them while hot, never using metal utensils, using the tiniest amount of oil, if any at all. These pans kept their "non-stickiness" for less than a year.

    I'm disappointed. My daughter bought a pair shortly after I did, and she's disappointed too. We've had non-stick pans before that were much better for the same price. So, beware, these won't be non-stick for long, and you will be left with two nice, heavy pans that stuff sticks to.

    Also, the design of the larger pan is not the best. The handle is too long and thin, and the pan is so heavy it's nearly impossible to pick up to pour anything out of it. There needs to be another handle on the other side. To be fair, other reviewers mentioned this; I just thought I was stronger than average. (I'm apparently not--the pan is too heavy for me).

    So, buyer beware. You might be disappointed if non-stick is really important to you.
