I am going to give a before and after review about making sourdough bread:Before --- I would mix the ingredients using a KitchenAid Mixer and meanwhile boil a pan of water, heat the oven at 400°F for one minute and after turning the sourdough in a greased container, placing the dough in the oven, with the oven light on. I would then place the boiling water under the dough container and wait 4 hours on the first proofing. Repeat: water, time and oven light for the second proofing.Now --- I build the Folding Bread Proofer, fill the pan with water and place the sourdough bread in a greased container in the oven, uncovered. I tried several temperatures and found the starter liked the Proofer set at 85°F (got the most notable rise at this temperature). So, it is easier to use this Proofer then the other technique, but was hoping for a better rise and maybe less time for the 1st & 2nd proofing. Tomorrow, French Bread, we will see. Judging from today's results I don't expect to much of a difference. Changed from 3 stars to 4 1/2 stars because for a very long time the sourdough after being cooked was very moist (something you want in a cake, not bread). This Proofer gave the sourdough a perfect moisture content.I was wrong, the French Bread doubled in size in 1/2 the time. I had to move the French Bread back into the oven with the light on for the second proofing, the French dough bread baking rack does not fit in the Proofer. As you can tell, I got a little too much water on one loaf and it expanded in the middle. But my bet, it will taste great anyway.Recommendations --- the water pan still had plenty of water in it after 8 hours of proofing the sourdough. Place several folded paper towels in the water dish so you don't do what I did, spill water inside the oven. My second attempt using the paper towels worked great.Hopes --- the company builds a slightly wider version of this Proofer and this wider version will allow the HP Type power cord to be stored inside the unit & also accommodate French bread baking racks.So, I will recommend this Proofer to those who love to bake bread. Happy Baking Folks!Recommendation for your starter: Carl Griffith's 1847 Oregon Trail Sourdough, just send a self addressed envelope and maybe a donation.

If you make a lot of bread this is a must. If you just make the odd loaf then the cost may not be worth it. I can’t believe how quickly I can make a sourdough loaf. Because you can control the environment you no longer have to hang around for hours till it proofs. Check out Utube for detailed info.
It also folds up into a flat pack for easy storage. Brilliant.
