I've run a few loaves of white bread and a few baguettes through the proofer. The results are consistent. I get a nice rise with no drying out of the dough. The temperature seems to come up quickly enough and remains constant. Staying within the size limits of the proofer I'd say this product is outstanding.
On the Saturday evening I received the proofer I forwarded my review to Brod & Taylor. Within an hour I received answers to the comments I made below.
Here's what I was told: Brod & Taylor will be coming out with a longer power cord based on other customer comments. It is easier to remove the pan of water if you raise up the box and let it fold towards the back. Now it is easy to maneuver the water tray without dripping. The temperature measured on my oven thermometer was invalid because it's not what it is intended for. However the thermometer did tell me that the inside temperature remained stable. They sent me a new base unit which snaps closed perfectly. They sent me a pre-paid return sticker so they can evaluate the original base.
How about that? Effective product and great service for a real good price.
Original Review:
My proofer arrived today. I didn't know such a thing existed before I read a mention of it on a baking forum. I had been proofing my bread in the oven as I keep the house quite cool (low 60's in the winter). I'd set the oven to "warm" and then let it cool to about 85 deg, put in the greased bowl with the dough ball and then wait. I'd repeat the process for the second rise in the bread pan. Then I'd pull out the bread pan, preheat the oven and bake. A few problems with this are: 1) the temperature in the oven would drop to room temp in a short period of time so rise was slow. I'd average about 2 hours for both first and second rise, 2) invariably the damp cloth I placed over the bowl would become entangled with the dough making a bit of a mess, 3) humidity, even with the damp towel was uncontrolled so it wasn't uncommon for the dough to develop a dry skin over the top, and 4) after crowning the bread pan I'd have to pull it out of the oven and preheat so the bread was still (slowly) rising past where I wanted it. I've only messed up one loaf by allowing it to rise too high on the second rise.
So for under $150 I see this proofer. Based on the price and the way it seems to fold for storage along with the maintainable proofing environment it seemed too good to be true. I was also wondering why some of the big names in kitchen appliances don't make such a thing. But the reviews were generally positive and I had to try it out.
The proofer was packed in a flat box within the shipping box. Internal support during shipping is provided by heavy cardboard on each end suspending the unit within the box. I elected overnight (Saturday) shipping and the box arrived at my door with no external marks. Inside everything looked to be in perfect condition. Inside the box was the main proofing unit, power cord, wire rack (which also makes a pretty nice cooling rack), small water pan and an instruction booklet with a couple of recipes - one of which I want to try.
Setup was easy. Lift the cover up to the 90 degree position. Lift up the box and fold it outward making sure it fits into the guides left, right and front when fully extended. Place the water tray in the middle and the wire rack over it. Put some water into the water tray. The cover lifts off the back hinge and lays on the top of the box. The cover does not snap in place and I was never quite sure I had it on right. The power cord plugs into the side near the control panel. Plug it in, turn it on, set the temp and wait 10 minutes.
During use I had a dial-type cooking thermometer in the box. The temp was set for 85 and the thermometer read 80. I figured this was close enough considering the thermometer is the type that is inserted into meats and such. Here it was just in the open air.
The cover has a clear plastic area so the dough is easily visible throughout the proofing process. I also noticed condensation forming on this window so I was sure the humidity inside was fairly high. After two rises my bread went in the pre-heated and ready oven. The timing for each proofing seemed quite reasonable. The skin of the dough did not seem dry. The final product is as good as any white sandwich bread I've made.
There is not much I don't like about this unit. The power cord is very short which I think is odd for a larger kitchen appliance. It is not the size of a toaster which can fit nicely under a counter close to a power outlet. This unit has to be out in the open so at least for me an extension cord is a necessity - which I do not like. Also, the cord end that plugs into the proofer is not the standard removable cord like used on PCs and other electronic gadgets. If it were then I could add a good length power cord. Also, the water pan is very shallow. After a few hours of proofing there was still plenty of water in it and of course I splashed it all over the place trying to remove it. I can probably find a better way to move it to the sink to empty it. When it is all closed up the top lid is difficult to snap in place in the front. Actually, I was very concerned I would break off a piece of plastic. It would be nice if it snapped closed easier and was more secure. It would also have been nice to have a handle molded into the unit. None of these issues are a big deal but I thought I should mention it.
I plan to update the review after a few more uses. My initial impression of the proofer is 99% positive. If you are the type of person that keeps your home a little cool in the winter and a little warm in the summer I think this proofer can bring a stable environment where your bread can rise predictably. At this price I wasn't expecting such a well designed, manufactured and functional device.
As a slow cooker/simmer-er (not sure about that last word) it is fantastic! Get the sauces, chili, beans up to a boil, and pop them in this and your worries are over. No sticking, no stirring, just perfectly cooked dishes! Much better than I could do on the stove stirring every couple of minutes.
As a bread proofer, it is a piece of cake. Place some water in the pan, (Which by the way, does not have razor sharp edges. I suppose if you pushed hard enough and went really quick you could manage to cut yourself, but you could do that with a piece of paper too.), drop the rack on, set your bowl or pan of dough on it, close the lid, and watch it go. You get a nice even rise with the drafts kept out by the fairly thick sides and top, and the temperature nice and steady (checked that with the infrared gun). You don't need to cover the dough either, the water in the pan it moist.
Although it was unplanned, the yogurt making function has been the most common usage hereabouts. The booklet that accompanies it has a very good recipe/instructions for using "store" bought yogurt for the starter, and it works very well. However, using the starter from Cultures for Health, I found that you get a better result if you follow their (CFH) directions (different times and temperatures). One lovely thing is that CFH recommends keeping the milk at 160~180F for 30 minutes for thicker yogurt. Easy-peasy with this device. Get the milk to 180F, and put it in the proofer on slow cook mode. Here is one discrepancy if found: with the slow cooker temperature set to 195F, the highest the milk would maintain was 171F. (Monitored this with a ThermoWorks ChefAlarm). It was still within the range, so no problemo. Another thing of which I am unaware of the cause, is that the temperature of the yogurt culture when put into jars and the placed in the proofer, rises, even though the temperature of the interior of the proofer remains fairly constant. (I chicken out and drop the setting on the machine to compensate. One day I'll get brave and let it go, it works for the store bought yogurt, so maybe it's okay.)
This is a great versatile product that uses less power than the maximum listed (checked that with an ammeter/watt meter). I am really, really pleased with it!
