Product Description
You will receive one healthy Kombucha SCOBY (symbiotic culture of bacteria and yeast) approximately 2 1/2 - 3 inches in diameter and about 1/8 - 1/4 inch thick. The SCOBY will be packed in approximately 1/4 cup of starter liquid (extra strong Kombucha tea). You may see "chunks" of yeast and bacteria starting to grow when it arrives. This will be enough to ferment about two quarts of sweet tea. A new baby SCOBY grows with each new batch of tea - so you can conceivably increase your production with each batch. You will also receive instructions on how to set up and maintain your Kombucha brew. PLEASE NOTE: The size, texture and color of each SCOBY will vary.

My first batch was complete yesterday and wow I love my own brew, the scoby was great and I had no issues with my first batch. I am super stoked and have started two more batches since my scoby has duplicated and one batch is not enough for an entire week so I made two batches this time. The live culture was great and comes with the tea needed to start, I was unsure of my first batch because I read so many things on how to make it and what to watch out for so I did add about a 1/4 cup of white distilled vinegar as well. I made mine with 1 gallon of distilled water boiled and after boiled I added 12 organic black tea bags, and let steep for 10 minutes as suggested. Once steeped I added 1 1/4 cup organic cane sugar and let cool overnight. I added 1/4 cup white distilled vinegar and the scoby with the kombucha sent with the scoby. covered with a a cloth napkin and put in my hutch, I never disturbed the brew during the week I would look in at it, but never moved it. Seven days later I had a wonderful first brew. I did take part of that brew and start a second ferment some with strawberries and some with blueberries, and I can not wait to try them. The plain Kombucha was awesome itself, so I am excited for the fruity version. Cheers to your first brew. I definitely recommend this scoby source.

The scoby I received was about 3 inches across and about 1/2 inch thick. It was sealed in heavy duty plastic which was inside of a paper/plastic envelope. There were very clear instructions on the envelope for making the initial batch of kombucha. I made the tea following the instructions, poured into a gallon sized jar, wrapped it in a towel and let it do its thing for 10 days. I also added an extra 1/2 cup of distilled vinegar to the brew to keep the pH down.
On the second or third day, the scoby dropped to the bottom of the gallon jar, where it is still living (2 weeks later). Since it is fall up here in the mountains, it fermented slower than usual. After 10 days, I unwrapped the towel and brought it into the kitchen to put the finished product into glass mason jars. I freaked out a bit when I took the towel off because it did look like I had mold growing on the top of the tea. After I brought it into brighter light, I realized it was just a very thin baby scoby at the top of the Kombucha and it was taking on a bluish tint because it was really thin in one part. I put the kombucha in jars with ginger and tart cherries, let it sit at room temperature overnight then put it into the refrigerator. I drank it over the course of 1 week and it was delicious.
I put another batch of sweet tea on top of my scoby (with a cup or two of leftover kombucha from the first batch) and let it ferment. The baby scoby is growing strong and the second batch is better than the first.
I have brewed kombucha before (along with other fermented beverages such as beer, ale and meads) so I do have experience and know what to expect. If this will be your first time brewing kombucha, there is a good book on Amazon and lots of places on the web to ask questions and get more information. There are a few things that are very important. First, make sure to rinse your brewing container and your hands with distilled white vinegar before you handle your scoby. Second, make sure your tea/sugar mixture is at room temperature before adding your scoby. Third, cover your opening with a dish towel held in place with a rubber band. The holes in the cheesecloth are too big and will let fruit flies in and will ruin your kombucha. Lastly, have patience. The kombucha will take some time to brew the first batch and waiting is the hardest part.
After the first batch or two, you may want to try a continuous brew. Have fun making your kombucha!
