2018 release. There are two ways to review this wine. One is simply to say it is unquestionably one of the best dry sherries available, and almost certainly the best value, and that you simply must try it. The other is to try and do justice to the panoply of aromas and flavours it delivers: rich umami yeastiness like hoppy beer and Marmite and oyster sauce plus baked green apples and spring blossom with the faintest milky character rounding things off – but it doesn't stop there, leaving a long, saline finish that moves into iodine and squid ink flavours and fades slowly on the finish like an echoes in a canyon. Even then, it doesn't do justice to the beauty of the thing. This wine, as a pure and unadulterated iteration of an already distinctive style, isn't only a drink but an expression of human creativity that bears comparison with any artistic endeavour. Selected from 62 casks in the González Byass foundational cellars of La Constancia and Rebollo, in the heart of Jerez, Spain. The 2018 Tio Pepe En Rama is particularly intense in character this year due to the cold, dry winter which enabled a compact cap of flor to form this year; creating a wine that is salty, sappy and concentrated.L&S (Apr 2018)

After years of falling sales, one of the ways in which the sherry trade has managed to reinvent itself is by reaching back to a less industrialised past, hence the trend for the style known as En Rama, which is effectively sherry’s answer to unpasteurised cheese, being much less heavily filtered than standard commercial sherry. The idea is that the bottled wine tastes as close to that in the producer’s cask as possible – more textured, more intensely flavoured – and should be drunk up relatively soon (a matter of months) after release. In 1835, a young man called Manuel María González Angel arrived in Jerez, intent on making a name for himself in the thriving and lucrative sherry business. Encouraged by the consistent growth in exports, that same year he purchased a small winery and began to produce and export his own wines. This was the start of Bodegas Tío Pepe which, due to the firm’s increasing success, became the González Byass company soon afterwards. Today, Bodegas Tío Pepe is known around the world as one of the leading producers of sherry and Brandy de Jerez.
