
Gluten-Free Chocolate Cake with Chocolate-Avocado Frosting & Fruit

Cake
- 1 pkg. Simple Mills Chocolate Almond Flour Muffin & Cake Baking Mix
- 3 eggs
- 1/3 cup Nutiva Buttery Coconut Oil
- 2/3 cup water
- 1 Tbsp. vanilla extract
Frosting
- 1-1/2 cups avocado (mashed (2 avocados))
- 1 cup melted Hu Gems
- 1/4 cup PRI Honey (or organic maple syrup)
- 1 tsp. vanilla extract
Garnish
- 1/2 cup fresh cherries
- 1/3 cup fresh strawberries
- 1/3 cup fresh blueberries
- 1/4 cup fresh cranberries
- Preheat oven to 350 degrees F. Grease 8-inch round cake pan with buttery oil.
- In mixing bowl, whisk together eggs, oil, water and vanilla. Fold in cake mix until well combined. Pour batter into pan and bake 30-37 minutes or until toothpick inserted in center comes out clean.
- In blender, blend together all ingredients for frosting until completely smooth.
- When cake is completely cool, spread on frosting.
- Arrange berries evenly on top.
