Spices Needed to Cook Green Kitchen at Home
The premise of Green Kitchen at Home is that recipes should be simple enough to make, deeply focused on vegetables and (usually) kid friendly. And, with stunning photography (and great taste) they will make you consider being vegetarian! The recipes are healthy, made with whole ingredients. Our favorites so far: Fridge Favorite Crepes, Turmeric Blueberry Muffins, Banana and Spinach Pancakes, Herby Green Breakfast Bowls, Shakshuka. Flatbread made great pizza dough substitutes (photo attached)—we are totally wheat-eaters, but have switched to this for Friday Pizza nights, as it get our kids extra hidden vegetables! Pros: 1. Gorgeous photography with pictures for every recipe. 3. Versatile Meals—they understand the changing opinions of kids, and give ideas on how to adapt recipes for preferences or seasons. 4. Recipes separate wet and dry ingredients—so much easier to follow! 5. Vegan alternatives. 6. “Fridge Favorites” section is simple, covers easy recipes needed to keep as staples in your fridge. These favorites are then combined later for different recipes. Many of the favorites are also available at the grocery store (think tomato sauce, pesto, hummus, flatbread…), but homemade is always better, right? 7. “At the Weekend” section includes the harder, more complicated recipes. I appreciated this separation, as a mother of two kids…this is the section I’ll use the least often, lol. 8. No refined sugar! 9. Tools section—I love seeing what people use in their kitchen. David says every vegetarian kitchen needs: spiralizer, mandolin, steaming basket, blender, scale, food processor or immersion blender, muffin tin. 10. Shakshuka! Haven’t tried it? You should + add the homemade za’atar. Cons: 1. Some recipes call for unconventional ingredients—we live in rural Maine, I’d probably have to drive 70 miles to find halloumi, puffed quinoa, za’atar, nigella (our online shop sells the hard to find spices, so hit us up if you can’t find them near you). 2. Recipe times do not include the time it takes to make the “Fridge Favorites,” so you really do need to plan ahead. Tip: Read the Fridge Favorites section first, before jumping around. Spices: To make all the recipes in this book, you will need the following spices: • Arrowroot • Bay Leaves • Basil • Cardamom • Cayenne • Chili (powder) • Chili (flakes) • Cinnamon • Coriander (ground) • Coriander (seed) • Cumin (ground) • Cumin (seed) • Curry (leaves) • Curry (powder) • Dukkah (they give you the recipe to make it) • Fennel (seed) • Ginger • Mustard (black seeds) • Nigella (seed) • Nutmeg • Oregano • Paprika (smoked) • Pepper (fresh ground) • Sea Salt • Sesame (seed) • Sumac • Thyme • Turmeric • Za’atar (they give you the recipe to make it) We've tried about two dozen recipes, and I look forward to more.     I’ve collected cookbooks for years. I’m a home chef, not a professional, but I love cooking and know my way around the kitchen. In the last several years I’ve added some excellent books to my shelf and have plenty of recipes under my belt for all occasions. But this book is different… Special.

    First thing, the recipes are surprisingly easy. Easy in the best way that allows the ingredients to speak for themselves.

    Second thing, for me the ingredient combinations and taste profiles are what makes it shine. It’s not just your average green cookbook with predictable range of flavors. The nuances of how sweet and savory are mixed pop the bubble of average and hit your palate in surprising ways.

    Third thing, loads of wholesome, healthy seasonally savvy choices from A-Z.

    My wife and I homeschool our kids. My six year old, as one of her classes, is learning how to cook with me. Every Friday we create a dish, and this is the source that we use. Later this afternoon we are making the turmeric and blueberry muffins with granola on top. Awesome!

    Not only is it great to have healthy choices to introduce her to, a lot of the recipes that we have tried are colorful and very fun. As finicky parents, we want her to be exposed to a range of tastes. Some challenging, some just plain delicious. This book delivers that for sure and everything we’ve tried in here is delicious! We feel it’s giving her a boost from an early age over the typical Western kids’ diet, which is generally garbage laden.

    Another bonus, this not only works to introduce kids to new food, the dishes in this volume are sophisticated and masterfully thought out. Many of these dishes are elegant enough for dinner parties w/ the most discerning gourmands as well as dinner at home with the family any night of the week, all year long. It’s super versatile, which is something I’ve come to appreciate with a busy family life. Particularly when you don’t have to futz too much in preparing a good meal. Last, these recipes aren’t too fussy but give ample opportunity to branch out and explore your creativity in the kitchen. Super well done and an inspiration.

    I learned about these guys from stumbling onto their YouTube channel. It doesn’t seem like they make videos anymore which is a pity because their videos are also beautiful. In any case, this is on my coffee table and I love picking it up to thumb through ideas for my family’s next meal.

    As much as I enjoyed Green Kitchen Smoothies, smoothies aren't my favorite way to eat a meal, so I've really enjoyed this new book from David and Luise. So far, everything from Green Kitchen at Home has been delicious and relatively simple to make. Banana and spinach pancakes. Middle Eastern sweet potato wraps. Mushroom, goat cheese, pear and walnut fettuccine. Farinata with roasted grapes and ricotta. While some of the GK recipes make use of a food processor and high-speed blender, there are a large number of recipes that are simply chop+saute/roast/simmer/toss-together style meals.

    Green Kitchen at Home is written in a casual but clear enough style that these recipes are accessible to any home cook, in any sized kitchen, who is interested in cooking vegetarian/vegan/gluten-free/nut-free. There are gorgeously-styled photographs of the finished dish next to each recipe, so it's easy to see what you're making.

    Green Kitchen at Home doesn't call for exotic & expensive superfoods or hard-to-find ingredients. Assuming you are a vegetarian and like to cook, the odds are good that you'll already have most of what you need: an assortment of nuts, onions and garlic, a variety of spices, lots of fresh vegetables, chia seeds, eggs, avocados, quinoa, those sorts of things. There are some recipes that contain dairy/eggs, but a tip is given on the sidebar about what to substitute, and plenty of recipes that are fully vegan. Likewise, if you're nut-free, David and Luisa include tips on the side for substitutions. All of the recipes are gluten-free.

    Based on the tagline for this cookbook, "quick and healthy", I assumed this cookbook would be mostly focused on recipes that didn't take very long to make. While there are certainly recipes like that, there are also quite a few recipes that have lengthier ingredient lists and prep/cook times extending well past 30 minutes....even in some of the recipes that are contained in the "during the week" section. However, the majority of those lengthy ingredients lists tend to be things like spices, onion and garlic, and an assortment of vegetables. On closer inspection, the longer prep times often consist of letting your soup simmer or cooking the quinoa, so the actual active time cooking is relatively modest. Even some of the "at the weekend" recipes are simple to throw together, like the Middle Eastern cauliflower & lentil salad and the baked portobello mushrooms in white wine and vegetables.

    So far, I'm quite pleased with this latest cookbook from Green Kitchen at Home. It's easy to work into my regular cooking routine, all of the options are very healthy but also flavorful and interesting, and they don't cost a ton at the grocery store.

    I love this cookbook. Not only is it beautiful and inspiring but everything I have cooked so far has been delicious. It's thoughtful food with great ideas for adding protein and wholesome carbs to your vegetarian diet and also works really well if you don't eat dairy. The authors offer substitutions. I am not a vegetarian but wanted inspiration for consuming less meat. This is a great option. Some meals take more time but others can be quick! I already have a cabinet filled with flour alternatives and a diverse spice rack so I didn't need to buy a bunch of new and special ingredients to make these recipes work. I am very happy with my purchase!

    One of my new favorite cookbooks. David and Luise are a real inspiration for everybody who wants to eat healthy and tasty vegetarian food but not fall back on only pasta dishes and standard salads heavy on cheese. Taste is most important, but recipes are also balanced perfectly to get enough protein and fiber along with flavor. Bonus: most recipes are gluten free (without anybody noticing), free of refined sugars and all can be made vegan if wanted with the tips noted in the book. This cookbook is a great tool to use for everyday cooking, with lots of tips and twist to make standard things a bit more special but not difficult. I would recommend this book to everybody!

    Sempre belli e piacevoli i libri di questi due danesi ( marito e moglie con prole ) , libro adatto a vegani e vegetariani non proprio secondo me per chi, come dice il titolo, non ha tempo, però idee ottime e ricette mai banali ma anzi molti spunti creativi.
    Unica nota che mi infastidisce e' l'esagerazione grafica dei colori delle pietanze ma è un mio gusto estetico personale.

    This is the first Green Kitchen Stories book I've bought. I get the impression from reading other reviews that some of their older recipes feature more complex recipes, but have to say it's not the case with this book. Have made loads of the recipes which have been delicious without exception and very easy - my non-veggie boyfriend and I particularly loved the lemon ricotta lasagne. I've found it so inspiring too, as the authors clearly demonstrate that a small amount of organisation means that easy, nutritious meals can be whipped up quickly throughout the week. And oh my, the photos are gorgeous. A fab book for veggies and non-veggies alike who want more plants in their diet and less time spent in the kitchen!

    Bis zum Erscheinen der deutschen Version konnte ich nicht warten, koche ich mich doch mehrmals wöchentlich durch die leckeren Rezepte der bisher erschienenen Bücher, den Blog und die App dieser zwei sympathischen Skandinavier. Mit vier Kindern ist die Zeit immer knapp und daher freue ich mich nun mit Hilfe dieses tollen Buches meinen Kühlschrank mit Basics zu füllen, und dann im Handumdrehen gesunde und dazu super leckere Rezepte zu zaubern. Da das Autoren-Duo ja inzwischen selber drei Kinder hat, sind diese Rezepte sogar Kinder erprobt...kaum ein bisher gekochtes Rezept, das von meinen Kindern verschmäht wurde.
    Für alle die bisher noch nicht in Kontakt mit Green Kitchen Stories gekommen sind: es handelt sich um ausgesprochen leckere vegetarische Rezepte (oft auch mit einem Hinweis auf eine vegane Variante), sowohl mit skandinavischem als auch internationalem Touch, dazu sensationelle Fotos zu jedem Gericht, die einem das Wasser im Mund zusammen laufen lassen und nette kurze Anekdoten zu den Gerichten aus dem Alltag der Autoren.
    Hinter diesem vierten Buch steckt die Idee durch einer Bevoratung von vorgekochten Basics wie z.B. Quinoa, Linsen, Reis, Tomatensauce, Pesto und Humus, aber auch Crêpe-Teig binnen weniger Minuten (oft unter 30 Minuten) ein leckeres und gesundes, frisches, auch Kinder kompatibles Essen auf den Tisch zu zaubern.
    Das Buch beginnt mit diesen Basic-Rezepten, darauf folgen dann aufbauend Rezepte leckerer Frühstück-Varianten, danach mitnehmbare Gerichte, Rezepte für unter der Woche, etwas aufwendigere Rezepte fürs Wochenende, Aufstriche und Kleinigkeiten, die jedes Gericht noch einmal extra aufpeppen und dann leckere Nachtische und Kuchen, bei denen man guten Gewissens auch die Kinder einmal öfter zugreifen lassen kann, da die Süße nie aus industriellem weißen Zucker kommt, sondern wohl dosiert aus all den natürlichen Möglichkeiten.
    Ich freu mich sehr auf Gläser voller herzhafter als auch süßer Granolas, für Salate, Suppen, Frühstück und Desserts und Glaskontainer voller Quinoa, Linsen, Pesto und Tomatensauce im Kühlschrank, die sich dann durch die Ergänzung frischer saisonaler Produkte in schnelle, leckere und gesunde Gerichte für die Familie verwandeln lassen.
