
Kale & Goji Salad with Turmeric-Infused Ginger Dressing

Salad
- 2 cups kale (torn into bite-size pieces)
- 2 cups shredded red cabbage
- 1 cup chopped red bell pepper
- 1 cup shelled and cooked edamame
- 2 Persian cucumbers (diced)
- 1/2 cup cashews
- 1/2 cup Navitas Organics Mulberries
- 1/2 cup Navitas Organics Goji Berries
- 2 Tbsp. Navitas Organics Hemp Seeds
- 1/2 cup chopped cilantro
Dressing
- 1/4 cup extra virgin olive oil
- 1/4 cup + 2 Tbsp. apple cider vinegar (divided)
- 1 large carrot
- 1- inch ginger?
- 1 shallot
- 1-1/2 Tbsp. tamari
- 1-1/2 Tbsp. maple syrup
- 1/2 tsp. Navitas Organics Turmeric Powder
- 2 Tbsp. water
- 1 tsp. ?sea salt (plus more to taste)
- In high-speed blender, combine all dressing ingredients and blitz until smooth. Taste and add more salt, if desired.
- In large bowl, combine kale, cabbage, bell pepper, edamame, cucumber, cashews, goji berries, mulberries, hemp seeds and cilantro. Toss together well.
- Drizzle 1 cup dressing over salad and toss again. Add more dressing, if desired. Serve on plates.
