Fructose looks just like its family member but where sucrose doesn't instantly dissolve and is a little harder to digest, Fructose dissolves almost instantly and is very easy to metabolize. Many people misunderstand when they see "High Fructose Corn Syrup," on a label. Contrary to what the PSA's promote, Dextrose, also known as Corn Syrup or Corn Sweetener is a complex sugar and doesn't break down easily. It turns into fat. Also, Dextrose is not really sweet, so much as sour. So high quantities of Fructose are used to cover that sour. But where fructose breaks down very quickly Dextrose lasts for a long time. Thus the mix. Not to mention that I just discovered that too much sugar in your diet actually makes you crave more food, not less.
So lecture aside, don't give Fructose a bad rap. It is the same sugar you find in Apples, Oranges, Grapes and any other kind of fruit. Pineapple anyone? You won't find dextrose or sucrose there.
The best part of Fructose is that it sweetens better and takes less. One teaspoon is as effective as 2 tablespoons of sucrose. And we won't even mention Corn Syrup.
I am very happy with the product. I use it in my Tea every day. I also use it for general cooking. Only difference is storage instructions. Refrigerate Immediately! Fructose breaks down faster and food needs to be properly stored.

My family has enjoyed the switch and can especially taste the difference in baked goods. We had tried another brand, but the texture of the granules was better on this product and held together. The other brand I tried was more of a power. As for the cost, I used to live in another country where is was more common to bake with fruit sugar, so the cost was much less and available at regular supermarkets. Wish it was the same where I live now in the states.
- Reviewed in the United States on September 15, 2018This product is almost pure fructose. I said so because I did some experiments to certify it indirectly.
My experiments are as follows:
1. Test my blood sugar in the morning on an empty stomach. In order to guarantee accuracy, I stopped injecting insulin and stopped eating anything the night before.
2. Then, I took 2 tablespoons of Now Real Food fructose in 250ml water and drunk it.
3. 30 minutes later, I tested my blood sugar again. I found my blood sugar was raised.
4. Got the difference between these two blood sugar data.
I did the experiments for 4 days. The average datum is 38 mg/dl(+-3).
Then I did the same experiments with cane sugar (Now Real Food Cane Sugar) instead of Now Real Food Fructose. The average datum is 88 mg/dl.
It means, eating the same amount of Cane Sugar and fructose, my blood sugar were raised 38 mg/dl and 88 mg/dl respectively. The ratio is 88/38=2.3.
As I know, the glycemic index of glucose is 100, sucrose is 60, and fructose is 23.(see other review)
The ratio 60/23=2.6, near the above datum 2.3. So, I believe the product is almost pure fructose and will purchase it again.

I use this because it tastes like sugar, only sweeter, so it's great for when you have something (a cake, a drink, etc...) but you want to give it just a little bit more of a sweetness kick.
For the record, the jury is still out on how good or bad fructose is for people, but, also for the record, this is FRUIT SUGAR - It's one of the dominant forms of sugar found in FRUITS, only extracted and concentrated. That's why I'm not afraid to use it. If I'm going to use apple juice to sweeten something, why not pure fructose?
With all that said, pure fructose (which this is) is about 70% sweeter than plain table sugar. That means that, ounce for ounce, you'll either get 70% MORE sweetness than you would for an equal amount of good old fashioned table sugar for the same caloric hit (ie: 100 calories of Table Sugar (sucrose) vs 100 calories of Fructose, you'll get 70% more sweetness from using fructose.) OR... you can reduce the amount of FRUCTOSE you use by HALF and still wind up with a perfectly sweet concoction... for half the calories.
Additionally, it melts like table sugar in water, and has the same "anti-freeze" capabilities that table sugar has (good for making slushies and ice creams.) Not sure how it reacts in baked items, or with yeast, (ie: how well the yeast feed off it, or how acidic / alkaline it is [necessary info when baking...]) but for how I'm using it, this fructose is GREAT!

I am diabetic, fructose IS a sugar so must be used in moderation. However, its low glycemic rate, means I can enjoy 3 mugs of coffee in the morning with just a small blip on my glucose. This stuff is wow, and tastes exactly like the real thing.
