I didn’t have the space for a full 1.5kg pork belly so my first try is with a 500g piece. You can either use the jar of cure in one go or divide equally based on it being enough for 1.5kg, but you need the space to keep the pork and hang in the fridge. It’s easy enough to do and follow the instructions, just takes a little time and patience for the end result. I’ve finished the curing part, I just went with a ziplock bag (not included) but may try vac sealing my next attempt. I did cut a sneaky bit off to fry and taste before I wait for the drying stage and it smells like bacon, had a nice taste to it and only a very subtle chipotle heat at the end, so should be good once it’s been through the drying stage.
You don’t get a lot for the money, a hook, muslin bag which is like a wide sock with both ends open, and the cure mix with instructions. It states you can leave longer in the fridge during the drying stage but this would just make the meat drier. I plan on following the instructions to the letter and as I have only used a third I don’t expect it will last long once I start cooking it! If doing a larger portion you could just slice and freeze. This would be an ideal gift for someone hard to buy for, as it’s unusual and whilst not much for the money it’s nicely presented in its card tube and would be a great way to try home curing, and more convenient.
My only criticism and reason for a dropped star is the inclusion of nitrites in the cure mix, now I know these help add colour, flavour to the meat, but personally it would have been nice to have been nitrite free, as this is possible. By curing your own meat you get the option to buy a good cut of meat, maybe even organic and so the option to then cure more naturally without nitrites would be nice.
