Yes, it comes with a calibration certificate.
Unlike dial thermometers, where the sensor can be in the shaft of the probe, the temperature sensor in a Thermapen is in the very tip of the probe. This is important. It means, wherever you put the tip of the probe, that is where your Thermapen is measuring temperature.
Different spots of meat are different temperatures. The best way to measure the doneness of meat is to push the probe tip just past the center of the food while it is cooking (being careful not to go all the way through) and to pull the probe tip back up through the food until you find the coolest spot. You'll actually notice the numbers on the Thermapen display change as you move the tip around. That's because different parts of the food are at different temperatures while it cooks.
If you have any concerns about the accuracy of your Thermapen, or any other thermometer, the best way to test them is with a properly made ice bath test, as it’s a standard laboratory test that is easily replicated at home. If your Thermapen is accurate, it will read within ± 0.7°F of 32°F (31.3 to 32.7°F). If it is reading accurately in this test, you can rest assured that it is reading accurately in various spots in food and at higher temperatures. If the pan has oil or butter in it, then yes, you can use your Classic Thermapen. However, if your skillet is dry, you'll want to use an infrared gun, as they are used to measure surface temperatures.
