Grain-Free Jalapeño Cheddar Bagels

If I had to choose my favorite type of bagel, my #1 will always be jalapeño cheddar. There’s something about that crispy cheese and that kick of spice that elevates your standard bagel. These are grain-free/gluten-free bagels (base inspired by Simple Healthy Kitchen!) that anyone can make at home!!

Ingredients (makes 6 bagels)

  • 3 cups almond flour

  • 1 cup tapioca flour (tapioca starch)

  • 2 tsp baking powder

  • 2 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp sea salt

  • 1 cup shredded cheddar cheese (plus more for topping)

  • 1/4 cup chopped jalapeño, seeds removed (plus 6 thin slices for topping)

1. Preheat oven to 350 F. Line a baking sheet with parchment paper, and bring a large pot of water to a boil.

2. In a large bowl, mix together almond flour, tapioca flour, baking powder, onion powder, garlic powder, and sea salt. Mix in 3/4 cup warm water and mix together with a spoon/your hands until evenly combined. Mix in cheddar cheese and jalapeño until they’re distributed evenly into the dough.

3. Divide dough into 6 even portions. Wet hands, and roll dough into a round ball. Press with your hands to flatten, and use your finger to create a hole in the middle to make a bagel shape.

4. Drop 3-4 bagels into the boiling water, and remove with a slotted spoon or spatula once they rise to the top. Place on a paper towel to remove excess water. Complete the rest of the bagels, and then transfer to the parchment-lined baking sheet.

5. Bake for 20 minutes, and then remove from the oven. Sprinkle cheese on top of each bagel, and place a jalapeño slice on top of each. Bake for another 10-15 minutes until cheese is melted. Broil on high for 2 minutes to get cheese to crisp, if desired. Let cool before slicing.
