Ball 14.8 Oz. Citric Acid Powder is a natural preservative that will not change the fresh taste of tomatoes. Citric acid is necessary for canning because it creates an acidic environment that won’t let harmful bacteria grow, for safe long-term preserving. Tomatoes need a lower pH in order to be water bath canned, so simply add a &frac14; teaspoon per pint or a &frac12; teaspoon per quart. This product provides a pantry-ready alternative to lemon juice when canning tomatoes. Citric acid spice is called for in 90% of USDA tomato canning recipes.
