It is medium straw in colour with a bright golden lustre and fine persistent bead. Fruit sourced from the East Coast, the Coal River and Derwent Valleys allow the bouquet to express lifted aromas of seaspray, jasmine flower, grapefruit, mushroom and a hint of chinese 5 spice. The palate is rich and complex with over 8 years in tirage driving length and enticing with it's hints of truffle, oyster, and rich secondary aromas. This wine has exquisite poise and balance of dosage, acidity and natural tannin.

The equal to any prestigious Champagne, Arras have a track record of releasing Australia's finest examples. Here the new Arras Blanc de Blancs is the latest to join the range and is a sparkling wine that truly expresses the attributes of prestige Tasmanian Chardonnay, meticulous winemaking and extensive age on yeast lees. Hands on techniques including gentle whole bunch pressing, fermentation on light lees which went through 100% malolactic and almost 10 years in tirage were employed. The wine itself is a masterpiece that possesses a brilliant clarity and ultra-fine persistent bead.

"Light to medium yellow colour, with a superbly complex, mature bouquet showing lots of toasty lees aged character. Some dairy-like malolactic overtones. Full-bodied, rich and ample in the mouth, dry and savoury with exceptional flavour and character. Very dry finish and creamy smooth mouth-feel. An outstanding wine. (Nine years on lees; dosage 4 grams/litre)"
