Preparation and Usage
Xanthan gum can help to bind gluten free bread and baked goods, if not already included in your flour blend, for bread 2 tsp to 500g flour, cake 1/4 tsp to 200g flour, pastry a pinch to 100g flour. For sauce, sieve 1 tsp over 1. 5 tbsp oil, mix into a paste and slowly beat in 500/600ml cold liquid before heating and seasoning.
Recipes
Oven 220°C, Fan 200°C, 425ºF, Gas 7
500g Freee plain white flour
2 tsp Freee xanthan gum
1 tsp Quick yeast
1 tsp Sugar
1 tsp Salt
500ml Tepid water
Oil oil, for tin
1. Rub some oil inside of a 1kg/2lb bread tin.
2. Put the flour, xanthan gum, yeast, sugar & salt into a bowl and mix well.
3. Stir in the water then two spoons of oil. Sprinkle the last spoon of oil over the batter, run the spatula round the bowl and turn the mixture to form a sticky mass.
4. Tip it into the tin and smooth the top.
5. Cover and leave it until the mix is 7mm/1/4" below the top of the tin (60-90 minutes).
6. Pre-heat the oven.
7. Bake for 50-55 minutes.

A good product
This is very reasonably priced, particularly when on offer for 25% off. I would definitely recommend it. It works well as a thickening agent for low-carb diet.

Better packaging than Phil vickery one and cheaper..all this D Farm range are great products..lid difficult to remove..apart from that, can’t fault it..
Good product but terrible packaging
The packet tens to split - 2 out of 5 have done this on me - along the seams down the sides, spilling powder everywhere
Difficult tub to use
I have the same problem with this packaging as I do with Doves Farm baking powder. The tub is so narrow and deep that you can't get the measuring spoon in after it is half empty. Having to pour it out makes accurate measuring very difficult.
Does it's job
Xanthan gum is essential for making gluten free bread, and also improves other recipes made with non-wheat flours - cakes, pastry etc. It doesn't add any flavour but provides the right texture. It stops pastry or bread from being excessively crumbly. This does the job perfectly well. I always use more than the recipe says, to give a good texture to my bread. Yes its made from the excretions of bacteria, but so what, I happily drink yeast wee.
